Halfway Decent eggs
Sometimes the most delicious, most nourishing food is also the most simple.
This morning all I did was cook two eggs sunny side up and place them on top of a toasted and buttered English muffin but it was one of the most delicious breakfasts I’ve had in a while. And I mean, would you look at it?
It took me a long time to get the hang of cooking sunny side up eggs properly, so I usually cook them over medium, but the yolk on these eggs was far too pretty so I dashed a little salt and pepper on top and then covered the skillet with a cookie sheet so the top of the eggs would cook properly.
I think the most important thing to cooking delicious eggs is actually buying good eggs from the start. I think that I should just get my own chickens eventually because I’ve become a total egg snob. These are heritage breed eggs from Happy Egg Co. and I was so excited when I saw them at the store because I have always wanted to try a blue egg. It did not disappoint and I highly recommend them if you can find them.
These were probably quite a bit more than Halfway Decent, honestly.
